Eating star fruit

Native to Asia, star fruit also known as carambola- is low in calories and high in vitamin A, fiber and potassium.

Originating in South-East Asia, this species is now cultivated in all tropical regions. Star fruit is a good source of natural antioxidants such as vitamin C carotenoids and phenolic compounds.

The total carotenoid content was 22 ug/g fresh weight. It’s also a great source of polyphenols, antioxidants that fight cardiovascular inflammation.

The fruit lowers cholesterol by reducing total cholesterol and LDL cholesterol and raising HDL cholesterol. 

The major antioxidants present in the fruit’s extract is proanthocyanidins, most notably epicatechin, an antioxidant more commonly association with green tea and red wine.

The star fruit may be eaten out of hand, in salads, or in a fruit cocktail. It is refreshing as a juice, or in a sorbet.

The star fruit is also used as a garnish for salads and alcoholic beverages.
